Chicken Barbecue – Filipino Style

Chicken barbecue restaurants offers the most popular style of chicken barbecue cooking  in the Philippines. This have been popularized in a small city of Negros Occidental called Bacolod city and became known throughout the archipelago.

In this style, barbecue restaurants uses chicken’s wings, breast, legs and other internal parts can be use. In making marinade, traditional ingredients are used. Here are the ingredients used in marinating:

  • A pinch of salt
  • A pinch of pepper
  • 1 Garlic
  • 1 pint of soy sauce
  • 3 table spoons of cane vinegar

Barbecue sauce is also use in this style. Here are the ingredients in making barbecue sauce:

  • A cup of ketchup (any brand can be used)
  • Half cup of margarine
  • Sugar (until sweeten)
  • A few drops of lemon extract
  • 1 cup of soy sauce
  • 1 to 2 table spoon of cane vinegar
  • 2 cups of cooking oil

Process of Cooking

  1. First of all, you have to marinade the main ingredient, chicken. Put all the ingredient for your marinade and dip the chicken for at least 3 hours.
  2. When all the ingredients had soaked into the chicken, it is ready to be barbecued.
  3. for the barbecue sauce, mix all the ingredients in a pan and heat it until the margarine and the ketchup had mixed thoroughly . Just make sure that you taste the sauce and do not put too much lemon extract. Few drops will do. If it doesn’t taste sweet enough, justa add sugar. If it sweeten with a bit sour taste, it is ready.
  4. On the grill, lay the chicken as usual. Use the barbecue sauce to cover the outer layer of the chicken and do it over and over again until it is cooked.
